Put the cinnamon sticks and the gingerroot in a baggie and smash with a hammer until crumbled. Discard any bits of the ginger that is stringy and mix with all the other spices. Store in airtight jar.
Use to pickle or stew any fruits, meats or vegetables.
Can be added to salt and brine when salting meats for long-term storage.
